Durable cookware is often made from stainless steel, aluminum, cast iron, or non-stick coating. Stainless steel cookware is perhaps the most popular. It does not conduct heat well but is durable and can last over 100 years of use. It is attractive, easy to maintain and does not easily chip or rust. Moreover, it does not react with acidic food and so it does not affect the taste and color of food.

Stainless steel is actually a combination of different materials, including chromium and iron. It is not exactly stainless but highly stain resistant. Stainless steel cookware is hygienic, provided that it has no pores or cracks where germs can hide and grow. Thus, it is important that the surface remains smooth and scratch-free. Bleach or ammonia is highly abrasive and can destroy stainless steel cookware.
